Pepper Roast

Sometimes, I see recipes in the Eating Well magazine that we carry in the store that look really good. I usually like to try these at home. We have discovered a few staples to our monthly meals by flipping through the pages of the magazine. I decided to try the roasted bell pepper recipe that was in last months edition last night.

Roasting the peppers at 450 in the oven and turning them every 7 minutes was easy. Letting them steam for 10 minutes was simple. Cutting and pealing them over the course of the next 20 minutes was not so much fun. The upside is that we have some wonderful roasted bell peppers for dinner later in the week. The downside is that my back wasn't really feeling the greatest. Nevertheless, the meal should make it worth the while.
